Unpair your Apple Watch Ultra before shipping it
In the Watch app on your iPhone, tap All Watches, the info button next to the Ultra and Unpair Apple Watch. The iPhone backs up the watch, erases it and removes Activation Lock. You remove the Ultra’s eSIM at the same time and cancel the plan with your carrier. If you no longer have the iPhone, remove the watch in Find My on icloud.com. Details are in Apple’s guide.
